El Capricho presents the story of a family that will recover the tradition in the production of accidents.
It has been going for 30 years if it is impossible to recover the tradition in the elaboration and labor of the acciughe. A tradition that began in Santoña at the end of the 19th century and that is based on a labor of love and in an artisanal way that does not count only on the material time but only on the quality.
In El Capricho it works only with Cantabrian fish and fish from the North, fishing with ships from the Cantabrian Sea (FAO 27), using only environmentally friendly fishing.
The area has always been very important to innovation.
Negli last year the march has expanded its range of products with a line of conserves of the highest quality with the recent incorporation of the red tone.
Everything in “home”, the process that is applied is both rigorous and specific and difficult to understand, for this reason it does not come more to personal seasonal matters. The labor is only available exclusively in the factory laboratories.
